THYME, a member of the mint family, is native to the countries bordering the Mediterranean where the herb grows wild. During the New Zealand gold rush of the late 1800’s, miners brought common thyme (thymus vulgaris) to the area to be used as a medicinal plant. Thyme slowly spread and now the Central Otago region of the South Island of New Zealand is the perhaps the only area outside of the Mediterranean where it still grows wild. This honey is known not only for it herbal qualities but also as a strong antioxidant honey.
